If you took the file there on a disk or thumb drive, wouldn't they be able to set the printer to print in B&W, or even print on just a B&W printer?

I have Adobe Acrobat Pro and I couldn't find any option to convert the file itself to black and white/grayscale.

Most pdf files start out as images to begin with, so the image would have to be converted to B&W before it was made a pdf.

What about a PDF printer? If you use something like primoPDF you could open the file in your reader, print PDF to file, and instead of duplicating the PDF, select to print in black and white. Cheap and simple.
